Kombucha is a common entry point into ‘alcohol-free drinks that are more interesting than water’. But fuck paying $6 a bottle for something that is essentially tea, sugar and a little know how.

If you DIY you can control the flavour, acidity and level of ferment. It’s cheap, has health benefits and is SO easy!

DIY Kombucha Guide

I have been playing with this recipe for a couple of years now and it is fairly fool proof! It does come with a warning! Because of the natural fermentation process (the SCOBY easts the sugar and poo’s out gas) there is a SMALL amount of alcohol present. Most store bought kombucha’s come in under 1% ABV, however if you are making your own at home, you have no idea how much fermenting is really going on. If you are concerned about that % you know the rule…when in doubt, go without!
